The one fish

Red mullet is a small, prized Mediterranean fish with pink-red skin and firm, sweet white flesh. Its liver is considered a delicacy and is traditionally left intact when the fish is cleaned. It has a unique, slightly gamey flavor compared to other white fish. It is popular in France, Spain, Portugal, and increasingly in the UK. Best grilled, pan-fried, or roasted whole.
