Secreto ibérico is the traditional name in Spain. Outside that tradition, butchers carry comparable pork cuts under different names — sometimes the same anatomical piece, sometimes a close cousin. Both are premium Iberian pork cuts from the front of the animal — secreto is from the rib area between shoulder and loin, pluma is from the loin end near the head.

Presa ibéricaapproximate

Both are premium Iberian pork cuts; presa is the eye muscle of the front shoulder, secreto is from the rib area between shoulder and loin.

United States

Flat iron steakapproximate

Both are hidden, unexpectedly tender and well-marbled cuts — secreto from the pork shoulder blade and flat iron from the beef chuck blade — suited to quick, high-heat cooking.
