Rainbow trout is the most widely farmed trout species globally, with pale pink to orange flesh and a mild, delicate flavor. It is sold whole or as fillets in markets across all regions. Brown trout is the wild European species. Both are popular for pan-frying whole with butter and almonds, baking, and smoking. Trout is farmed extensively in Spain, France, Mexico, and Argentina.
