Suadero is a thin cut of beef taken from the area between the belly and the leg of the cow, comprising a thin layer of smooth muscle and fat. It is a distinctly Mexican cut with no direct international equivalent. When slowly rendered in its own fat it develops crispy edges and a rich, fatty flavor. It is one of the most beloved taco fillings in Mexico City.
